Smaller Recipes

 So what are Smaller Recipes?

They are my recipes honed after years of use, using minimal and usually inexpensive ingredients, but with the ability to add to them if you have more money, more time or just want more or different flavours.

  They are recipes with all the faffing about taken out and are quick to prepare in single portions as written here, or in batches by doubling or trebling the ingredients to save some for meals later in the week or to pop into the freezer.

One of the most basic recipe of them all, but one that can save you a fortune and make leftovers into complete meals.

PASTRY

4oz Plain Flour

2oz Fat  (butter, lard or a mixture of the two)

Pinch of Salt

2 or 3 dessert spoons of cold water


Rub the fat into the flour and salt with your fingertips, when it resembles fine breadcrumbs add the water a spoonful at a time stirring with a knife.  When the mix starts to clump together turn it into a ball with your hands.  Handle it lightly, and form a flat disc shape, wrap this in clingfilm and place in the fridge or a cold place for at least 30 minutes.

Roll out your pastry when you need it, it can be used for pies, pasties, tarts etc.

Press falafels flat to make Falafel Burgers, absolutely delicious served on a bun with some hummus, tomato slices and lettuce.


Use hummus as a dip for toast, crackers or vegetable crudités.
  
Use as a delicious nutty tasting sauce for pasta.

Use as a pizza topping for a change from tomato based toppings. 

 Use as a spread on your sandwiches instead of butter or mayonnaise.



Use this same basic recipe to make a pizza base.

Roll out into one large rectangle and cut into strips to make homemade Tagliatelle.  Drape the strips  over a coat-hanger to dry for a couple of hours and then cook in boiling salted water for 3 - 4 minutes, top with your favourite sauce.

Roll into one large circle, brush with oil, roll up and coil the roll, rest and repeat.  Then roll out for a final time brush with oil and cook in a hot frying pan to make a Paratha.


Whizz the cooked bean mixture up to make Beanburgers, adding other vegetables, rice or lentils to bulk them out and add flavour and goodness.
