I'm loving using the last of things from the fridge and seeing the space appear and in this instance it was the last two slices of the 'No Pork' bacon and the last of the cream. There's still another portion of the Tenderstem broccoli to use up ... most likely for tea tonight ... but last night I added just enough to my dish to give it a good hit of flavour. There are lots of the tomatoes left which I am going to roast with the peppers and some onions to make a tub of roasted veg to add to a couple of meals for the week ahead.
While I chopped the veggies the onion and pasta were already cooking away on the hob to give them a head start. Once the onions had softened I tipped everything else into the pan along with a good squirt of the garlic puree and left it all to putter away for ten minutes.
A very easy tea cooked in less than 15 minutes and extremely tasty with the addition of a splash of the pasta water and the addition of the last of the cream which is not something I do that often ... perhaps I should ๐

Just a note to regret what you are missing. One day last week on the Millenium Walk a heron, otter and kingfisher were spotted.
ReplyDeleteWe went to the carpark in the car on Sunday morning, I just walked along the side of the cricket field and then sat on a bench, but Alan carried on a bit further and yes the heron was in his usual place. Neither of us have seen an otter or kingfisher though, lucky you. ๐
DeleteHi Sue, you are doing really well using bits up from the fridge and freezer. It's so rewarding when you manage your put a meal together from almost nothing.
ReplyDeleteI could literally eat this sort of dish every night, it's so quick and tasty and minimal washing up ... which is possibly the best bit.
DeleteAnother successful meal, Sue! Looks yummy!
ReplyDeleteIt was really nice, and I have variations of this regularly. :-)
DeleteThat looks especially yummy. Love how you get so much out of your fridge gleanings.
ReplyDeleteGod bless.
It's amazing what you can make out of virtually nothing. ๐
DeleteThat looks completely amazing! I am not a cook - I have a hard time putting ingredients together like that! YUMMY!!!
ReplyDeleteIt's simple but very tasty. ๐ It's only since doing a few online cookery courses over the past couple of years that I found myself just instinctively throwing things in a pan and it actually turning out good.
DeleteHi Sue, I’ve noticed your small kitchen aid food processor in a couple of your posts could you tell me a bit about it as I have a rather large version and I’m on my own now so looking for a smaller one. Heather
ReplyDeleteIt's been a real game changer. I used my Kenwood until we moved from Wales but sadly was too big for the worktop here, so I let Alan have that and I treated myself to this KitchenAid version, something that I have always wanted.
DeleteIt is super strong and super fast and I would highly recommend it. One of the big advantages is that you store all the various blades and graters inside it when it's not in use, so no more needing drawer space as well as counter space.
