I've spent the first couple of weeks of this year and this new Challenge trying desperately to get into a routine, but I still feel like I'm winging it a bit. Photos are stacking up on my camera and need downloading to the computer, things are being shown on the blog posts slightly out of sync etc etc ... the only good thing is that I'm doing minimal shopping and that I am managing to eat some pretty decent food three times a day, well twice yesterday hence my menu now being out of sync. 😏
I made some mashed potatoes ready to make the little Potato Pizzas for my tea last night and ended up having no tea. They are ready in the fridge for tonight, well the bases are and the other half of the mash is in a bowl ready for this weeks Shepherds Pie.
The one in the photo above is last weeks version ...
... and it's mash came from an additional baked potato made when one of my lunches last week was a Jacket Potato.
It's this doubling up and having things waiting that while being good for energy consumption and less work later also causes confusion and a little queue of foods waiting to be used.
But by and large getting into a routine and planning ahead does work well for meaning that no food is wasted. For instance I was prepping the veggies for the Mediterranean batched cooked vegetables last week and I decided to pull a couple of slices of the peppers, onions and tomatoes to one side to add to a cheese and mayo bun, meaning that I had a really tasty lunch that in a way was 'free' of extra things needed. And chopping things for two meals at once means less washing up, and that in my book is always a winner.
The cheese salad bun was eaten with the last quarter of this bag of crisps.
A tasty lunch and less work later on, it suits me just fine.

Hi Sue, when you cook more thank one backed potato do you store the spare one in the fridge of freezer. Heather
ReplyDeleteIf it's going to be eaten during the same week it just goes in the fridge. If it will be used the following week I would peel it, mash it and put it in a tub in the freezer.
DeleteI think it's hard to get into a very strict routing with food related stuff but you're doing really well and it all looks absolutely delicious.
ReplyDeleteMaybe you could do three and four day plans over the week so if something doesn't happen, it can be moved on without either messing up too far a head or having to wait so long?
xx
That's quite a good idea, maybe I'll do a four day plan for next Monday and then add to it after a couple of days.
DeleteI do three to five meal prep and salad at a time. moving things around as and when and so far, it works well with little to no waste and on days when pain or fatigue get the best of me, I don't worry about eating poorly. Your food looks lovely.
ReplyDeleteYes, I think it would make more sense for me to do this. At the moment I'm just glad that I write the menu in pencil as there has been a lot of rubbing out!!
DeleteYour meals always look very tasty. Last night I tried your tuna recipe with chic peas, onions, garlic, lemon juice and mayo. It was delicious and so filling. I do like lots of variety and your potato pizza looks great too.
ReplyDeleteIt is filling isn't it, I'm glad you liked it. :-)
DeleteYou are doing a great job and it doesn't have to be a strict schedule. You should be able to adapt for days when something unpredictable comes up. Keep up the good work!
ReplyDeleteYes adaptation is the name of the game isn't it, and will be even more so as the weeks go on.
DeleteMeal plans are all about change and adaptation anyway. Our daughter came for lunch today so I swapped the planned cider hotpot for a pasta bake because it made 3 good portions whereas the hotpot would have been more of a faff to do and would have made 4 portions so an odd one left over. What I want to know is how you could resist eating all the crisps and managed to leave 1/4 for today? I wouldn't be so strong willed ;)
ReplyDeleteI didn't used to be able to leave any crisps or chocolate once a packet was opened, I'm surprising even myself these days, but the doctor did warn me about a reduction in appetite ... I do wish it came with a reduction in weight though which doesn't seem to be happening. Oh well at least the lack of exercise isn't making me gain at all.
