Oooh, you can't beat a nice big pan of Dhal puttering away on the stove top.
I keep my recipe dead simple, just sauté a chopped onion, add a big squirt of garlic paste, some cumin and this time I added a teaspoon of coriander and some turmeric. Then I poured in some rinsed red lentils and enough water to more than cover them. It simmered away for around an hour filling the Van with the most gorgeous rich curry scent. I fancied making it creamier but I didn't have any coconut milk to add, so I waited until it had completely cooked and then stirred in a huge spoonful of coconut yogurt the lovely thick Coconut Collaborative one.
It's was delicious.
For the first meal I ate it just as it was.
Leaving a couple of portions to cool ready for the fridge and freezer.
The next night I added a Spinach pellet from the freezer and it was even more delicious.
Then last night I just couldn't help myself, I really fancied it again and it reached a whole new level of green loveliness with two spinach pellets from the freezer.
Maybe the next one will have to pellets of spinach AND some frozen peas added.
Just how green can I go 😄

Sounds really good to me! I always spell this as "dal" but it was clear what you meant.
ReplyDeleteDhal has quite a few ways of spelling it, none is wrong ... it's a bit like yoghurt/yogurt. You choose the one you use and stick to it 😃

DeleteTo me, dhal is one of those dishes that don't look too beautiful but are totally yummy, also just like pizza, you can put on or in it whatever takes your fancy, I have never been a purist in my cooking and it's such fun.
ReplyDeleteYes it can look pretty murky, remember the version I made for last years Ration Challenge over on my other blog, it was like a dollop of mud on rice ... but it was still tasty :-)

ReplyDeleteYes, I always add salt and pepper to it after it has finished cooking, that way the flavours have developed better and the lentils cook better if they're not salted ... and you can get the seasoning just right.
DeleteI've only just started making Dahl despite my mother being Indian. I love the simplicity of it. The lentils just absorb all the flavours you add. Love the way you've added stuff to the base mix making it a different meal each time.
ReplyDeleteLittle variations are good, adding some coconut yoghurt really worked well this time too. I'm going to sauté the onions and garlic in coconut oil next time and add desicated coconut just after the lentils for even more of a totally coconut vibe.

DeleteLooks delicious Sue - I think spinach is a really useful veg to have in the fridge for just such recipes.
ReplyDeleteThe pellets are frozen, so even better value for money. Just take out as many or as few as you need and drop them into the pan as it warms through 😃

Dals provide the necessary proteins in a vegetarian meal. Your dal looks yummy. There are numerous ways in which we make dal at home, and also numerous types of lentils we add to make the final dal. There is also a dish called khichadi we make that cooks dal and rice with a whole lot of veggies in it - the complete meal if you’re short of time and want a wholesome meal in that short time. Loved the way you made healthy variations to your dal.

DeleteYes having brown rice along with a nicely flavoured dahl makes for a nutritious as well as tasty simple meal.
It's such a good base for so many flavours.
I make lentil dhal weekly and could live off it easily - haven't tried spinach in it though so will do next time, it looks delicious and of course is added iron. Have you tried paneer in your curry? its so quick and easy as a meat replacement.
ReplyDeleteIsn't paneer a cheese though? Unfortunately I'm dairy intolerant, quite severely so now ... I pushed my luck with something this week and had a horrendous two days afterwards. I don't know if there's a vegan version, I shall have to check 😃

Haven't made it for ages but will suggest it to my eldest daughter (who is with us now). My husband wouldn't touch it with a bargepole!! The added spinach is a great idea.
