Simple Breakfast, Simple Tea


I'm going really well with my no shopping at all at the moment, even in the fridge there are lots of things to munch my way through and so there's no need or temptation to shop at all.  I have been having a single slice of toast first thing in the morning, I have to as my tablet can't be taken on an empty stomach and that's all I can face first thing, so it's meant that I have been missing some of my more usual breakfasts, porridge, yogurt and muesli with banana and now and then a good old bacon bun.
 

So in a heroic effort to use it up, this was my early lunch yesterday, and there's enough left for an action replay at the weekend 😀


I also needed to use up these two slightly squidgy tomatoes, so I based my tea around them.  I simply chopped them and the little red onion, sautéed them together and then added the full pack of noodles. 


It made for a simple, quick and very tasty evening meal.


Now to do something with these very wrinkly apples.  I dread to think how long they have been in the fridge.  I've just checked and the top apple is our homegrown apple and that's been in the fridge since 1st October ... the others were already in there!!

  1. You are doing really well. I dread to think what my cupboard is going to be like when I get back to japan it will either be empty or full of ramen and cup noddle. No kidding my middle has a list and is off to Costco to do a monthly shop. He loves that place. Huge bags and cans and whatever western or Asian you can think of. Me I can take it or leave it. But it is very cost efficient for us.
    The apples either stew them with some sultanas yummy, apple cookies or a tiny apple pie lol. Good luck!

    1. Ooh it will be interesting to see what you have in the cupboards when you get back 😃

      I have a little bit of that ready rolled pastry left from when I made the pasties the other day, so it will be an apple and pastry something for sure ... yummy. 😀🍎

  2. Those apples wouldn't last 5 minutes in my house - I eat 3 or 4 a day. You could make apple muffins (freeze and go to when hungry) or a chocolate apple cake (slice and freeze for a treat) with those wee apples. Or grated in yoghurt for a less fattening option.

    1. I seem to have phases with apples and I've obviously been going through a phase of NOT eating them recently :-)

      There was no room in my freezer for anything until yesterday so it had to be something to be consumed immediately ... and we did!!

  3. I've seen that Plant Menu bacon but didn't buy it because it looks a bit 'odd'. Does it crisp up Sue? I used to love a crispy bacon bun. It sounds like your Smeg is worth it's weight in gold because of how well it keeps fruit and veg :)

    1. They do look odd and the different coloured parts cook up with slightly different textures to give the 'mouth feel' of bacon, it works really well. It does crisp up nicely if you cook it for slightly longer than the 5 minutes recommended, I like it a bit firmer too.

      The Smeg is a godsend, although I wish I had gone for the size down now. Having a slightly smaller freezer but on top would have worked out better for me.

  4. You could roast the apples cut into quarters with some sugar and cinnamon. Great with porridge.

  5. Perhaps dehydrate and use in muffins and loaves at a later time. Which reminds me I have to make some apple muffins next week. We finally finished off the Christmas baking.

    You do so very well at using things up.

    1. I've never been keen on dehydrated apples, I think it's the weird rubbery texture, but apple muffins sound delicious and it would work with fresh apples too.

  6. There's a nice winter salad you can do at the moment with ageing apples - cubed apple, cubed beetroot and golden sultanas tossed in an oil and vinaigrette dressing.
